Pumpkin Whoopie Pies

Tender whoopie pies with cream cheese filling

Ingredients
  

  • 1.5 Cups brown sugar
  • 3/4 Cup Canola oil
  • 2 eggs
  • 1.5 Cups Pumpkin pureed
  • 3 Cups flour all purpose
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3/4 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 3/4 tsp ground ginger
  • 1/2 tsp` ground nutmeg

Instructions
 

  • Heat oven to 350°
  • Combine wet ingredients in large mixing bowl, blend until smooth
  • Place dry ingredients in a sifter and sift into wet ingredients
  • Mix until smooth - DO NOT overmix as this makes the texture dense
  • Drop approximately 2 Tbsp of batter onto oiled cookie sheets spaced 3" apart.
  • Bake until puffed and set, about 12-14 minutes
  • Cool on wire racks
  • Assemble your whoopie pies by frosting one cookie and topping with another cookie.

Notes

Tip: You'll want an even number of cookies!
