Instructions
Heat oven to 350°
Combine wet ingredients in large mixing bowl, blend until smooth
Place dry ingredients in a sifter and sift into wet ingredients
Mix until smooth - DO NOT overmix as this makes the texture dense
Drop approximately 2 Tbsp of batter onto oiled cookie sheets spaced 3" apart.
Bake until puffed and set, about 12-14 minutes
Cool on wire racks
Assemble your whoopie pies by frosting one cookie and topping with another cookie.
Notes
Tip: You'll want an even number of cookies!
