Cheesy Sweet Potato with Pickled Jalapeno

Ingredients
  

  • 1 Medium Sweet Potato
  • 2 Ounces Reduced Fat Shredded Monterrey Jack Cheese (or regular)
  • 1 Ounce Sliced Pickled Jalapeno Peppers
  • Pan Spray
  • Salt & Pepper

Instructions
 

  • Preheat oven to 450 degrees.
  • Cut sweet potato into 1/2 inch thick rounds.
  • Spray pan and sweet potato with pan spray.
  • Sprinkle with salt and pepper.
  • Roast 20 minutes.
  • While the potatoes cook, roughly chop jalapenos.
  • Remove sweet potatoes from oven and top with cheese and jalapenos.
  • Bake for another 5 minutes until cheese is melted and bubbly.
