My family LOVES this Healthy Greek Lemon Chicken Orzo Soup recipe! My daughter loves the Lemon Chicken Orzo Soup from Panera Bread so when I saw this recipe, I had to try it! I changed the ingredients a little bit and we fell in love! Now it’s a once a week recipe for us. And the best part is there is usually enough leftover for my husband and I to take to work the next day.
Everyone should have Homemade Vanilla Extract in their cupboard! This is an easy, feel-good concoction. You can choose what potency or proof you want your vanilla to be. Bear in mind the alcohol cooks off during baking.
I purchase vanilla beans from a food co-op. Do yourself a favor and get organic. It’s just the right thing to do! Slice two or three beans lengthwise. Do not cut them in half. The goal is to just open them so the alcohol can mingle with the inside of the beans.
Challenged by my sister Chris to come up with a healthy brownie recipe a few weeks ago after she published her own healthy brownie recipe, I came up with this pumpkin brownies recipe. Knowing me well, Chris nailed it when she said that I’m an organic, natural kinda person. I like that she makes me think and urges me outside my comfy box, but — gee! Emily and I differ on recipes like this. Just be warned… she is a very natural, organic type of person and I am a “if it tastes good, I like it!” type of person. She would frown on the artificial sweetener portion of this recipe so I challenge her to give me her BEST all natural ingredient brownies that are still healthy in calories. Think she will? Hmmm…
Emily chiming in here: I have accepted Chris’s challenge. You can compare this recipe with mine and let us know which recipe is your favorite. I do strive to use all natural ingredients, and I do NOT like artificial sweeteners. I guess my Sis and I will have to agree to disagree on this. (I’ve read the science behind why artificial anything isn’t good. That’s a topic for another blog post someday.)

This pickled beets recipe, while not only fun to make, is also delicious! Yesterday I cleaned up the rest of my garden. As soon as it’s tilled, it will officially be put to bed. Ahh. Every year Bill’s daughter asks for ice cream cake for her birthday. This year, I decided I would make one for her. I browsed Pinterest for ideas of easy to make ice cream cakes and saw a couple different possibilities. This is how I cook and create anything I do. I compare a few ideas, take the parts I like, and concoct what works for me. This Reese’s Brownie Toffee Delight Ice Cream Cake was AMAZING! The entire family loved it! All three of us participated in the creation, but it was extremely easy to do. In our house we believe in affordability, ease, and taste. For a 13th birthday celebration, TASTE is priority. This has all we were looking for and was a true success!

Tomatoes don’t speed up their ripening for the cold weather. Yes, you can pick tomatoes and put them in a cardboard box or paper bag to ripen quickly but what about the ones that don’t ripen? I’ve never tried fried green tomatoes but every fall I am reminded of them. One of our Dad’s favorite movies was Fried Green Tomatoes (Widescreen Collector’s Edition). In fact, it seemed every time I went to visit him, he was watching that movie. He said he never tried fried green tomatoes. I wish now I had made them for him. He would have loved them! I made this easy Mexican Spaghetti Squash recipe for my family, and they went nuts for it. I actually had to go buy more squash to do it again!
